BRUNCH  For those that prefer to sleep in and love to linger over good food and perhaps enjoy Champagne or a Mimosa, this Bespoke experience is made for you.  Virtù , Bespoke’s on-site, award-winning restaurant owned and operated by Chef Gio Osso serves brunch daily to guests of the Inn (complimentary) and is also open to the public.  On the first day of his culinary hedonism’s menu, one could indulge in a Valrhona chocolate scone, a gigantic crepe with parma cotto ham, gruyere, eggs, mornay and chives, followed by affogato made with nocciola gelato and espresso bean turbinado sugar.

DINNER  Virtù has become a new favorite among discriminating foodies.  Serving up house-made pastas, superb seafood, new Mediterranean creations and rustic favorites, Chef Gio Osso invokes a menu at Virtù that changes almost weekly.  With favorites like hazelnut crusted scallops with bacon, caramelized onion gnocchi and white chocolate beurre blanc, it’s no wonder this intimate 58-seat eatery is already attracting crowds – and praise – from across Arizona and beyond.  Described as “one of the finest interpreters of modern cuisine in the west,” by lauded food writer John Mariani, Osso’s Mediterranean roots inspire the menu, while contemporary global influences are seen throughout dishes like Moroccan spiced lamb with smashed chickpeas, minted eggplant and homemade tzatziki.  For those lucky enough to score a seat inside Virtù’s comfortable, yet contemporary dining room, expect to be treated to what Osso refers to as a “beautifully composed symphony of sights, smells and tastes.”  Outside, diners may enjoy dinner and a beautiful desert evening with a craft cocktail or glass of wine on Virtù’s picturesque courtyard patio.
